1 Tbsp. butter
1/4 C. chopped chives or green onions
1 small onion, chopped
2 whole cloves
1 large bay leaf
1 Tbsp. flour
2 C. milk
1 C. whipping cream
1/8 tsp. nutmeg
1/8 tsp. cayenne pepper
1/2 lb. fresh crabmeat
1 bottle (8 ozs.) clam juice
1/4 C. dry sherry

Melt butter in a heavy saucepan over medium high heat. Add onions, cloves and bay leaf; sauté until onion in translucent, about 3 minutes. Sprinkle with flour and stir 1 minute. Gradually whisk in milk and cream. Add nutmeg and cayenne pepper. Reduce heat medium low. Simmer until slightly thickened, about 15 minutes. Strain the soup into a bowl; pressing the solids to release liquid. Return liquid to same saucepan. Add crabmeat, clam juice and sherry; simmer until thickened, about 15 minutes (do not boil). Season with additional cayenne pepper, salt and pepper, if desired. Garnish with the chopped green onion or chives. Serves 4.
