4 medium sweet potatoes, peeled and cut into 1/2-inch rounds
3 Tbsp. olive oil
4 large garlic cloves, minced
1/3 C. fresh thyme leaves
1/2 tsp. kosher salt
1/2 tsp. red pepper flakes

Directions:
Directions:
Preheat oven to 450. In a large mixing bowl, combine all
ingredients and toss. Arrange potato slices in a single layer on a heavyweight rimmed baking sheet. Place on top rack of oven and roast until tender and slightly browned, about 40 minutes. Serve warm or at room temperature. Garnish with additional thyme sprigs.
