Crust:
1 cups Flour
1/2 tsp salt
1/3 cup plus 1 T shortening
2-3 T cold water

Filling:
2/3 cup sugar
1/4 cup cornstarch
1/2 tsp salt
3 cups milk
4 egg yolks
2T butter
2t vanilla
3/4c flaked coconut

Meringue:
4 egg whites
1/4 t cream of tartar
1/2 c sugar
3/4 t vanilla

Crust:
Mix flour and salt, then add shortening. Sprinkle in water 1 T at a time, mixing until all four is moistened and dough cleans side of bowl (1-2 tsp water can be added if needed.) Roll out dough to fit pie pan; prick bottom and side with fork. Bake at 475 degrees for 8-10 minutes.

Filling:
In saucepan, stir sugar, cornstarch and salt. Blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils, stir 1 minute. Remove from heat; blend in 2 T butter, vanilla, and flaked coconut. Immediately pour into baked pie shell.

Meringue:
Beat egg whites and cream of tartar until foamy. Beat in 1/2 cup sugar, 1 T at a time; continue beating until stiff and glossy. Do not under beat! Beat in 3/4tsp vanilla.Spread on top of pie. Sprinkle top of meringue with coconut.

Bake at 400 degrees for 10 minutes or until a delicate brown. Cool away from draft.
