1/2 c. minute tapioca
2 c. cold water
1/4 tsp. salt
Juice from canned pineapple
1 c. sugar
2 cans mandarin oranges, drained
20 oz. can crushed pineapple, drained
1 c. cream, whipped
1 tsp. vanilla
1/4 c. sugar
2 bananas, sliced

Directions:
Directions:
Combine tapioca, cold water, salt and pineapple juice drained from can of crushed pineapple. Cook together on low heat until it looks clear. Cover and set awhile.
While still warm, stir in 1 c. sugar. Add mandarin oranges and crushed pineapple. Refrigerate overnight.
Next day, add cream (that has been whipped), vanilla and 1/4 c. sugar.
Stir into tapioca mixture. Add sliced bananas and fold in until well mixed. Let set in refrigerator until ready to serve.
