1 lb. 80/20 ground pork
3 c. finely chopped vidalia onion
1 c. chopped celery
1/2 c. red or yellow bell pepper
2 c. ketchup
1/2 tsp. oregano
salt and pepper to taste
4 eggs
2 cloves minced garlic
2 c. crushed club crackers

Glaze:
3/4 c. ketchup
1/4 c. dk. brown sugar

Directions:
Directions:
Preheat oven to 350º. Mix all ingredients in a large bowl. Cover a cookie sheet with foil. Pack meatloaf heaping in loaf pan. Flip pan over onto foil. Do this 2 times to get 2 loaves or shape to your preference.
Bake for 30 minutes. Remove from oven. Baste top and bottom with glaze. Bake for 30 minutes more. Remove from oven and cool for 30 minutes.

Bill really enjoyed this meal when he stayed at Health South recovering from a broken hip in 2010. Although he recommends the meal, he doesn't recommend the process he had to go through to get it.
