1/2 cup shortening
1/2 cup margarine
2 cups sugar
5 eggs, separated
2 cups flour
1 tsp. soda
1/2 tsp. salt
1 cup buttermilk
1 tsp. vanilla
1 2/3 cups flaked coconut

Directions:
Directions:
Blend shortening and margarine. Add sugar gradually and beat until fluffy. Add egg yolks one at a time, beating well after each addition. Sift flour, salt and soda. Add alternately with buttermilk, beginning and ending with flour mixture. Add coconut and vanilla to cake mixture. Beat egg whites until stiff peaks form. Fold into batter. Put into three lined and greased 8 inch cake pans and bake at 375º for 25 minutes or until cake tests done.

FROSTING:
1/2 cup margarine
1 8-ounce package cream cheese
1 1-pound box powdered sugar
1 tsp. vanilla
1/8 tsp. salt
1/2 cup chopped pecans

Blend and spread between layers and on top and sides of cake.
