2 c. sugar
2 eggs
1/2 c. oil
2 1/4 c. flour
2 tsp. soda
1/4 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
4 c. apples, peeled and sliced thin
1/2 c. nuts (optional)
1 c. raisins (optional)
ICING:
1 1/2 c. powdered sugar
6 oz. cream cheese, softened
3 T. margarine, softened
1/4 tsp. salt
1 tsp. vanilla
Directions:
Directions:
Use mixer to combine sugar, eggs and oil. Sift together flour, soda, salt and cinnamon. Add to first mixture; mix well. Add vanilla, apples, nuts and raisins. Pour in greased 9x12" pan. Bake at 350 degrees for 45 minutes.
For icing: Use mixer to combine all of above icing ingredients. Spread on cooled cake. Freezes well. Good served hot.
