3 eggs, beaten
3 Tbsp Dijon mustard
1 ½ cups bread crumbs
½ cups Parmesan cheese, grated
1 tsp salt
1 tsp freshly ground pepper
1 Tbsp oregano, chopped
4 chicken breasts

Directions:
Directions:
Preheat oven to 400°. In a small bowl, whisk eggs and mustard. In a separate bowl, blend bread crumbs, cheese, salt, pepper, and oregano. Grease a 9x13 baking dish. Dip chicken in egg mixture, then coat liberally in crumbs. Place coated chicken in baking dish. Bake for 20-30 minutes until golden brown and juices are clear.

Serve hot, cold or even at room temperature.
