4 cups of watermelon, cubed (must be a good, flavorful, firm watermelon)
1 cup fresh fennel sliced thinly
freshly chopped parsley (could use mint or basil also)
Dressing:
1/2 c. juice from blood orange (or regular orange...but freshly squeezed)
1/8 c. extra light olive oil (good quality oil is important for this recipe)
sugar to taste
freshly ground sea salt

Assemble salad and chill (serve very cold). When salad is plated, drizzle a small amount of dressing on and around salad.

This is my best approximation of this recipe as I never measure anything, I hope you don't make it and hate me! :) Play around with it and adjust it to your tastes. Adam and I had this at one of our favorite restaurants in Salt Lake, "Sea Salt" and later tried to recreate it together at home. Blood oranges can be hard to find, regular oranges can be used, you may need to increase the sugar. Very fresh and satisfying!
