2 cups dry kidney beans
2 medium ripe tomatoes
1 large onion
20 oz whole stewed tomatoes
6 fresh Serrano peppers
1 tbsp chili powder
1 bay leaf
1 tbsp freshly ground black pepper
6 cups fresh beef stock or consommé
175 mls tomato ketchup
175 grams garlic sausage
2 tbsp Portuguese red wine
salt, sugar and hot sauce to taste

Directions:
Directions:
Rinse and soak beans in cold water overnight. Cook in slightly salted boiling water until firm but tender. Dice tomatoes, onions and serranos. Slice sausage. Very lightly saute sausage, add diced tomatoes, onions, serranos, chili powder, bay leaf and fresh pepper. Deglaze pan with wine. Add stewed tomatoes, ketchup and stock. Bring to a boil then simmer one hour. Add beans. Sugar, salt and hot sauce to taste.
