3 1/2 Tbsp salt

Mix and pack down in crock; cover with plate and weigh down. Ready in 10-12 days. Pack in canning jars, adding juice to cover.

(Last line item of this recipe also calls for a 15-minute water bath. Sorry, but I have no idea what this means.)
