1 lb. ground beef
1 c. water
1 can refried beans
1 pkg. burrito seasoning
4 flour tortillas
1 pkg. shredded taco cheese
1 pkg. shredded pizza cheese
3 Tbsp. olive oil or vegetable oil
2 med. tomato wedges or cubed
3 c. shredded lettuce
sour cream, optional
taco sauce, optional
salsa, optional

Directions:
Directions:
Brown ground beef; drain fat. Add seasoning and water. Simmer 10 minutes. In a 10-inch skillet over medium-high heat, heat 1 teaspoon oil. Place 1 tortilla in the skillet and sprinkle enough cheese on half of tortilla. Then add ground meat mixture and refried beans on the cheesed side of the tortilla and top with cheese before folding in half. Cook stuffed tortillas, one at a time, until very lightly browned and crispy (about 3 minutes). Turn and cook second side until tortilla is lightly browned and cheese is melted (about 2 minutes). Remove from pan and reserve in a warm oven until all quesadillas are done. Make sure as with tacos that you have plenty of shredded lettuce, wedged tomatoes, salsa, taco sauce, and sour cream for garnishment.

A quesadilla is a south-of-of-the-border grilled cheese sandwich with meat. This is one of our family favorites and I hope it becomes yours too.
