6-9 Scampi per person(according to size)
butter
1 T. shallot, finely chopped
1/2 c. brandy
1 cup white wine
6 artichokes
Mix: breadcrumbs, Parmesan cheese, grated, rosemary, chopped and basil leaves, chopped

6 large zucchini
milk
flour
olive oil
Garnish: Lemon & Parsley

Directions:
Discard all artichoke leaves and boil in water and lemon. Save only the bottom parts which will be placed in the center of each plate. Spread breadcrumbs, Parmesan and herbs over the artichoke bottoms.

Saute` scampi in butter. Remove fat and add shallot. Flame with brandy and white wine. Reduce.

After removing pulp and seeds of zucchini, cut the outer part in pencil-thin strips, soak in milk, dip in flower and fry in olive oil. Scampi are placed in the center and the zucchini are spread around the plate. Garnish with lemon sections and parsley.
