2 lbs. sea-bass sliced into 6 steaks
1/2 lb. mushrooms
6 T marinated tomatoes
1 Bottle Spumante (sparkling wine)
8 tablespoons cream
1 egg yolk
2 tablespoons of whipped cream
salt
pepper, freshly ground
vegetable assortment: steamed potatoes, carrots and zucchini

Directions:
Directions:
Place sea-bass steaks in a pan and cover with sliced mushrooms, marinated tomatoes, salt and pepper, and pour over the sparkling wine. Cover the pan with aluminum foil and place in the oven at 400 degrees for 8 minutes. When cooked remove fish and reduce juice. Add the cream and reduce until sauce is smooth and creamy. Remove from stove and whisk the whipped cream with the egg yolk and add to the sauce. Pour this over the fish and return to the oven under the broiler until it has a nice brown color. Serve with steamed vegetables on side.

Marinated Tomatoes: fresh plum tomatoes, olive oil, basil leaves, salt - - Cut off the top of the tomatoes and parboil the tomatoes. Peel, remove seeds and liquid. Dice or cut lengthwise, as needed and marinate in olive oil with the basil and a little salt for about an hour( can be done early and kept in refrigerator for numerous recipes!)

This is a recipe from a famous hotel, Villa d` Este, in Lake Como, Italy. I have a few from traveling in Europe that the "brave in the kitchen" may enjoy! This one is really quite easy and delicious though (: !
