Bag of Baby Spinach
1/2 c. chopped onion
1/2 lb. 1 inch cubed bacon
2 T. butter
Salt
Pepper
Parmesan

Directions:
Directions:
In skillet cook bacon until crisp. Place on paper towels. Use some remaining drippings and saute onions. Add butter and melt. Fill sink with water and bag of baby spinach. Clean thoroughly. Drain in colander. Put in skillet with onions and butter and stir constantly until spinach is wilted to desired crispness. Remove from skillet and toss with remaining bacon. Sprinkle with Parmesan cheese.

I personally do not like my spinach too wilted. This is very quick , a matter of stirring for a few minutes. Great on side with Grilled Lime Flank Steak!
