1/2 cup butter
1/2 cup all-purpose flour
3 cups milk
1 tablespoon Dijon mustard
1 t. salt
10 cups thinly sliced Yukon Gold potatoes
2 cups Gruyere cheese, shredded
2 cups shredded Cheddar cheese

Directions:

Preheat oven to 350 degrees. Generously grease 13 x 9 inch glass baking dish.
In saucepan, melt butter over medium heat. Stir in flour with wire whisk until smooth. Gradually stir in milk. Heat to boiling. Reduce heat to low, cook about 5 minutes, stirring frequently, until sauce is slightly thickened. Stir in mustard and salt.
Place 1/2 potatoes in baking dish, top with half of the sauce and 3/4's cup of each of the cheeses. Repeat layers. Bake uncovered 50 to 55 minutes or until potatoes are tender and top is a nice brown. Let stand 5 to 10 minutes before serving.

This is also great as an "After Easter Dish" Just add some small cubes of left over ham when doing layers.
It makes for a yummy dinner with side tossed salad!
