1 lb lean ground turkey
1 package French's Taco Seasoning
8 soft white corn tortillas
1 can (16 oz) refried beans
1 -1/2 cups shredded Mexican cheese blend
1 package of cooked yellow saffron rice
1 cup coarsely crushed tortilla chips

Diced fresh tomatoes
Chopped cilantro
2 T. Olive Oil

Chopped green onion
Sour cream
Favorite salsa

Preheat oven to 350 degrees. Take 11x7 inch (2 quart) glass baking dish and cover base with olive oil, (grease)
In skillet, cover with thin layer of water and 2 T. olive oil. Place turkey in dish and cook thoroughly, chopping as you cook, so no pink is left on ground turkey. Drain, add 1/4 c. fresh water, 2 T. olive oil and French's Taco Mix. Simmer for 5 minutes and remove from heat. Line baking dish with 4 corn tortillas, overlapping them. Top with half turkey mixture and 3/4's cup of cheese. Layer remaining 4 tortillas over cheese. Spoon and spread rice over tortillas. Top with remaining meat mixture. Sprinkle with tortilla chips. Bake uncovered 30 to 40 minutes. In separate bowl mix, 1 T. olive oil, chopped fresh tomatoes, cilantro, and stir with salt, pepper to taste. Place in refrigerator while casserole is cooking. Use as garnish with casserole. Sour cream and fresh salsa optional.
