Rockfish Stuffed with Crabmeat Recipe

For the fish:
1/4 cup chopped onion
4 oz mushroom, drained reserve juice
1/2 cracker crumbs
1/2 tsp salt
1/4 cup butter
7 1/2 oz crabmeat
2 tbsp parsley
2 lb fish whole

Sauce:
3 tbsp butter
3 tbsp flour
1/4 tsp salt
mushroom liquid and milk to make 1 1/2 cup
1/2 dry white wine
1 cup of swiss cheese
1/2 tsp paprika

Directions:
Directions:
Saute onion in butter until transparent, stir in mushrooms, crabmeat, cracker crumb, parsley, salt and a dash of pepper.

Stuff fish. Place seam side down in a baking dish.

Sauce: In a fry pan, saute butter, flour, salt. Add milk and mushroom liquid. Add wine and cook until thick. Pour over fish and bake for 25 minute in a 400 degree oven. Sprinkle with paprika and cheese and bake another 10 minutes. Serve immediately
