2-3 T. butter
1 lg. onion,chopped
2 c. cooked chicken(3-4 breasts),shredded
3 oz. can chopped green chilies
1/4 c. chopped black olives
1 pint sour cream
8 oz. shredded Monterey Jack cheese
1/2 t. garlic powder
1/4 t. black pepper
pinch cayenne pepper
1/2 t. salt
2 doz. flour tortillas (small)
shredded Mexican cheese
2 17.25 oz. jars Pace mild enchilada sauce

Directions:
Directions:
Melt butter in skillet. Saute' onions until tender. Combine chicken,onion,chilies and olives with sour cream,cheese and seasonings. Pour a little enchilada sauce on bottom of 9x13 in. pan, Place about 2T.of chicken filling on each tortilla and roll up. Arrange tortillas,seam side down in pan. Pour enchilada sauce over tortillas.Sprinkle with Mexican cheese. Bake at 325º for 20-30 minutes. Serve with sour cream. I often make them and wrap them individually in foil and bake or microwave them and serve them with salsa (no enchilada sauce.
