1/4 c. pineapple or orange juice
2 T. lemon juice
4 salmon fillets
2 T. brown sugar
4 tsp. chili powder
2 tsp. grated lemon rind
3/4 tsp. ground cumin
1/2 tsp. salt
cooking spray

Directions:
Directions:
Combine first 3 ingredients in a zip lock bag, seal and marinate 1 hour in refrigerator, turn occasionally. Preheat oven to 400º. Remove fish from bag and discard marinate. Combine sugar and next 4 ingredients (sugar - salt) in a bowl. Rub over fish, place extra on top of each fillet; place in an 11x7" baking dish coated with cooking spray. Bake for 12 minutes or until fish flakes easily when tested with a fork.
