Mix the following together in a large pasta bowl -
1 T. olive oil
1/2 tsp. minced garlic
2 T. fat free evaporated milk
1/4 c. light sour cream
6 T. parmesan/romano cheese
1/2 tsp. salt
1/4 tsp. pepper

4 oz. linguine pasta
8 or 10 oz. pkg. frozen vegetables
16 oz. pkg. precooked frozen shrimp

Cook pasta according to pkg. instructions. (I cook pasta in chicken broth instead of water for added flavor.) For the last 2 or 3 minutes of cooking add the frozen vegetables and precooked frozen shrimp (be sure to remove the tail shell). Before draining the pasta water, reserve 1/4 c. to add to the sauce, if needed. Drain pasta, veggies and shrimp; pour into pasta bowl and toss to coat. Add some reserved broth as necessary. Serve immediately.
