6 Large Red Skin Potatoes - scrub clean - don't peel10 10 Eggs - hard boiled - remove shell
1/4 C Dijon Mustard
1/4 C Mayo
1 small onion - diced small
1/2 C - cooked Carrots diced
1/2 C Sweet Green Peas
Salt & Pepper to taste

Cut potatoes into small cubes and boil until soft but not falling apart. Set aside and let it cool completely.

Boil eggs to be hard boiled, cool and peel.
Mash eggs and add all the ingredients except the potatoes. Taste as you mix since you may need to add a little more mayo, mustard or salt to get your preferred taste. Use the measurements suggested above as a guide to start. Once you have all the ingredients mixed, add the potatoes but fold them in and mix gently so the potatoes don't fall apart.
Arrange on platter and chill.
