Ingredients:  
1. Beat ½ cup sugar into 3 egg yolks and ¼ tsp salt
2. Place 4 cups whole milk on stove and start to warm.
3. Stir (with a whisk or mixer) the egg yolk mixture into milk.
4. Cook and stir with a wooden spoon until wooden spoon is coated with thickened mixture (Up to 13 minutes)
5. Do NOT heat too high and keep stirring steadily so it does not curdle.
6. Cool in frig .(I always do it overnight.)
7. Add 1/8 tsp salt to 3 egg whites and beat until stiff
8. Add to milk with ½ tsp vanilla. (I usually whisk it in.)
9. Top with nutmeg, if desired.
