Dough:
1 packet dry yeast
1 c. lukewarm water
1 T. sugar
1 t. salt
2 T.olive oil
Stuffing:
2 eggs,beaten
2 T. finely chopped parsley
1/2 . ricotta cheese
1/2 c. mozzarella cheese
4-8 oz. cooked & drained spinach
1/2 lb. hot italian sausage, cooked & drained
Top layer:
Tomato pizza sauce (Pastorelli)
Toppings of choice, such as skinned fresh tomato slices,onions,mushrooms,olives,peppers
Parmesan cheese

To make dough:
Dissolve yeast in water. Add sugar,salt,oil,and flour. Knead until smooth and elastic . Place in greased bowl.Cover with a wet towel. Let rise until doubled in bulk.

To make stuffing:
Mix all stuffing ingredients into nice gooey texture.

To assemble pizza:
Divide dough in half. Roll out 2 crusts to fit bottom of deep dish ceramic or glass pie plate. Spread stuffing over bottom crust. Cover stuffing with second crust. Trim and crimp edges. Spread coating of olive oil over top crust.

Bake in 400º oven for 15 mins. When crust is golden brown, remove from oven. Spread with pizza sauce,toppings and cheese. Bake for 20 - 25 minutes or until center of crust is completely done. Remove from oven.Let stand for 5 minutes. Slice. Serve.
