4 skinless chicken breasts
3 cloves garlic minced fine,
1 T parsley,
1 small frozen orange juice,
1/2 t salt,
1 stick butter,
1/2 cup raisins.
1/3 cup green olives chopped
1/4 cup sliced almonds toasted
4 cups of cooked rice

Directions:

Cut chicken in large bite size chunks and marinate with the garlic, parsley,salt and 1/3 of the orange juice for several hours.

Take chicken out of marinate(save) and dust with flour and saute' in olive oil till nicely browned. Add the butter and raisins and olives with the saved marinate and more orange juice (to taste). Cover and cook till chicken is done and all flavors blended.

On a very large serving plate , spread on the cooked rice, top with the chicken mixture and top that with the almonds.

Set in center of table and let everyone serve themselves.

Sounds like a weird combination but is very yummy. One of my and Annie's favorites.
