8 oz Whole wheat penne pasta
4 (5 oz) boneless skinless chicken breasts
1 T. olive oil
2 minced garlic cloves
1/3 c. dry red wine
1 can (28 oz) chopped tomatoes
4 oz. sliced mozzarella
1/3 c. grated Parmesan
1/3 c. fresh parsley

Directions:
Directions:
Cook pasta al dente.Brown chicken breasts in olive oil for 8 min and season with salt and pepper. Remove from pan. Brown the minced garlic and add red wine. Boil 1 minute. Stir in chopped tomatoes and simmer 8-10 minutes until thickened. Return pasta and chicken to pan. Top each piece of chicken with 1 slice mozzarella and 1 T. Parmesan. Top with fresh parsley.
