1 lb. boneless chicken breasts
1/3 c. soy sauce
2 T. fresh lime juice
2 cloves garlic,minced
1 t.grated fresh ginger root
3/4 t. red pepper flakes
2 T. water
3/4 c. canned unsweetened coconut milk
1 T. creamy peanut butter

Cut chicken crosswise into 3/8 in. wide strips; place in shallow glass dish. Combine soy sauce, lime juice,garlic,ginger root ,& red pepper flakes in small bowl. Reserve 3 T. mixture; cover & refrigerate. Add water to remaining mixture. Pour over chicken;toss to coat well.Cover;marinate in refrigerator at least 30 mins. or up to 2 hours. Stir mixture occasionally. Soak 8 10-12 in. bamboo skewers 20 mins. in cold water to prevent from burning;drain. Prepare grill.

For peanut sauce:
Combine coconut milk,3 T.reserved soy sauce mixture & peanut butter in small sauce pan. Bring to boil over med. high heat, stirring constantly.Reduce heat & simmer uncovered 2-4 mins. or until sauce thickens. Keep warm. Drain chicken, Reserve marinade. Weave 3-4 chicken strips accordion style onto each skewer.Brush with marinade.Discard remaining.

Place skewers on grill. Grill uncovered over medium heat 6-8 minutes until no longer pink. Serve with peanut sauce.
