4 fish fillets - orange roughy or any other white fish,
1/2 lb. fresh mushrooms sliced, 1 small bunch green onions sliced, 1/4 C bread crumbs, 1/2 C melted butter, 1/4 C shredded Monterey Jack cheese, salt and pepper to taste, 2 tsp white wine, juice of 1/2 lemon

Preheat oven to 400° Spray a 9 x 13 baking dish. Line the bottom of the pan with sliced mushrooms and green onions. Place the fillets on top and season. Sprinkle with wine and lemon juice. Top with bread crubs and cheese. Pour on butter. Bake for 12 minutes.
