Beef roast (3-4 lb)
1 onion cut in fourths
¼ cup butter cubed
Salt and pepper
1/2 cup water in pan

Directions:
Directions:
Place roast in roasting pan. Top with salt (1 tsp?), pepper, onion and cubed butter on top of beef in pan and roast at 325 degrees, about 1 hour per pound or until very tender. Remove beef from broth and cool both overnight in fridge. Remove fat from broth and make gravy with added beef broth and thickening. Slice beef thinly and place in roaster with gravy. Warm beef and gravy slowly in oven at 325-350 till beef is warmed through. (approximately 1 1/2 hours)
