4 cups peeled and shredded potatoes (about 4 large)
1 egg lightly beaten
3 tablespoons flour
grated onion
1 teaspoon salt
1/4 teaspoon pepper
Cooking Oil

Directions:
Directions:
Rinse peeled and shredded potatoes in cold water. Drain well. Place in a large bowl and add the lightly beaten egg, flour, onion, salt, and pepper. Drop 1/3 cup of mixture in hot oil on cast iron griddle or pan. Flatten to form a pancake. Fry until golden brown and then turn and brown the other side. Drain on paper towels. Serve immediately.
