8 Medium sized potatoes peeled and cut in eighths.
2 Lemons
1/4 cup of olive oil
3 tablespoons of Greek Seasoning

Preheat oven to 400º. Coat potatoes with the oil, lemon juice and herbs. Place in a casserole dish.
Bake for 35-40 minutes turning 3 or 4 times during that time.

This is one of our favorite ways to serve potatoes. The left-overs only get better with the marinating in the oil and spices. You can change up the flavor by using different spices such as lemon/pepper or Cajun. The potatoes will get much crispier if they are place on a baking pan and do not touch each other, turning more often for a uniform roast.
