Gentile's Potato Salad Recipe

6 - 7 potatoes, skin on
5-6 heaping Tablespoons Hellman's mayonnaise
3 T Minced dried onions (McCormick's)
1 t.Celery salt
3 T salad vinegar
salt
pepper
Paprika
Parsley

Directions:
Directions:
Scrub, prick, boil whole potatoes (skin on) in lightly salted water, until fork tender, about 1 hour or so.
Drain. Refrigerate immediately for a few hours or so.
Peel and cube potatoes and place in large bowl.
Add to potatoes: mayonnaise, dried onions,celery salt, vinegar, salt and pepper to taste.
Using rubber spatula toss carefully to coat all completely.
Refrigerate for a few hours or overnight.
Sprinkle lightly with paprika and a little parsley for color.
Tastes even better the next day!

This was made at Gentile's, a little family owned grocery store in Monponsett where we very often shopped in the summer, and Uncle Robert would deliver Liberty Bread to! They brought it into the deli from their house behind the store in big metal bowls, sometimes still warm. We would have it with fresh imported boiled ham and native tomatoes on nights when it was too hot for Mom to cook. Too hot to cook?? NEVER!!! That was just an excuse to have it. We always loved it with sandwiches or burgers, or just by itself. Mrs. Gentile herself said that the secret ingredient was the dried onions.
