Chicken parts as desired. I use breasts usually.
Salt, Pepper and Garlic salt/powder both sides.
Pour hot pepper vinegar over each breast.

Place skin side down in LE CREUSET or any other pot that cooks evenly. Leave about 1/2 inch of vinegar in bottom of pan. PUT LID ON POT.

Place pot with cover in oven at 400 degrees for about 1 1/2 - 2 hours. If you smell the vinegar drying out (burn type smell), then add a little more. Don’t add too much as you want the chicken to brown.

After 1 1/2 hours, take it out of oven, add a little more vinegar and put top back on the pot and let it sit another 30 minutes.

This is Brenda Colombo's recipe. It is very easy main course. The chicken is amazingly tender with lots of flavor. I serve with orzo pasta and a salad or roasted asparagus.
