1 box penne
2 medium size Italian sausages (I use spicy, but you can also use mild)
1 lb fresh wild mushrooms
3/4 cup of peas
1/2 of a sweet yellow onion
2 cloves of garlic
a handful of chopped mint
1 large glass of your favorite white wine (Sicilian preferably!)
salt and pepper
olive oil

Skin sausages and cut into 1 inch long pieces. Heat the olive oil in a frying pan over medium heat and brown the sausage. Add chopped onion and garlic and let soften. Add the mushrooms, cover and turn heat down to low. when mushrooms shrink down, take off lid and season with salt and pepper. Turn heat to medium and add white wine. Let the alcohol burn off and turn down heat to low and cover.

Cook the penne as directed on box. Half way through; spoon a small amount of the pasta water into the sausage and mushroom mixture and add the peas. Mix well and cover. When the pasta is finished cooking; drain and add to the frying pan with sausages, mushrooms and peas. Turn off the heat and add the mint. Mix well, toss and serve!
