1. Fluffy white rice
3/4 c. chicken broth
1/4 c. soy sauce
1 1/2 tbsp cornstarch
2 skinned and boned chicken breasts cut into 1/4 in wide strips
1 tbsp peanut or vegetable oil
4 celery ribs sliced
1/4 lb fresh snow peas, trimmed
4 large mushrooms, sliced
3 green onions, sliced
1 pkg slivered almonds (2 oz)

1. Prepare fluffy white rice as directed and keep warm.
2. stir together broth, soy sauce and cornstarch.
3. Cook chicken in hot oil in a large skillet over medium-high heat, stirring constantly, 6 minutes or until almost done.
4. Add celery and next 3 ingredients, and cook stirring constantly, 3 to 4 minutes or until vegetables are crisp-tender and chicken is done.
5. Stir in broth mixture and bring to a boil stirring constantly.
6. Boil for 1 minute stirring constantly.
Serve over fluffy white rice and sprinkle with almonds
