1 1/4 cups flour
1 cup oatmeal
1/2 cup brown sugar, packed firmly
1/3 cup cocoa
1 T. baking powder
1/4 tsp. baking soda
3 ripe bananas
1/2 cup soy milk
1/3 cup margarine
1 tsp. vanilla

Directions:
Directions:
1. Preheat oven to 400ºF and line or grease muffin pan.

2. In a large bowl, combine flour, oatmeal, brown sugar, baking powder, and baking soda.

3. In a separate bowl, whisk together the bananas, soy milk, margarine, and vanilla. Combine with the dry ingredients and stir just to combine.

4. Fill muffin pan 2/3 full with batter. Bake 20-25 minutes or until inserted toothpick comes out clean.

For a milk free version, I recommend Earth Balance Buttery Sticks. You can also mix chocolate chips and/or nuts into the batter before baking.
