1 1/2 lbs. ground beef, extra lean
1/2 cup milk
3 slices whole wheat bread, crusts removed
1/2 onion, finely chopped
2 eggs, beaten
1/2 cup ketchup
1/2 cup chopped parsley
1/4 cup grated Parmesan cheese

Preheat oven to 350ºF. Measure the milk into a medium bowl, then add the bread slices and let them soak until you need them. In a large bowl, mix together the meat, bread and milk, eggs, ketchup, parsley, onion and cheese until they are completely combined. You'll need to use your hands. Transfer the mixture to a 4 x 10-in. loaf pan and pat it down gently. Bake for 50 minutes on the center rack of your oven until the top is a deep brown and the loaf has pulled away from the sides of the pan. Let the meat loaf cool for 5 minutes before removing from the pan and slicing. Use a large spatula to ease the meat loaf out of the pan.
