2 - 15#Turtle (live weight)
1 Whole onion
Large can V-8 or Tomato juice
1 tsp. Ground Allspice

FRESH VEGETABLES
5 sliced carrots
6 sliced stalk celery
parsley
2 chopped onions
1 lb green beans
3 bay leaves cut up

1 can diced tomatoes
salt
pepper
4 chicken bouillon
4 beef bouillon
1 1/2 cup of Barley
Minced hot red peppers
1 tsp sugar

FROZEN VEGETABLES
3 1# bags mixed frozen vegetables
1 1# bag frozen Lima Beans
1 1# bag frozen Peas
1 1# bag frozen Corn

In a 16 Quart Stock Pot
Put thawed Turtle Meat into Pot - Cover meat with water. Put in whole Onion. Cover & Simmer until meat falls from bones (4 - 5 hours).
Skim occasionally while simmering.
Take meat only from the pot and cool - do not pour out the broth - just take out the meat to cool.
Remove meat from bones and put aside
Strain Broth to obtain a clear broth
Add large can of V-8 or Tomato Juice. Add 1 tsp ground allspice,
Add all Fresh Vegetables. Add 1 can diced tomatoes, salt and pepper, 4 chicken bouillon, 4 beef bouillon.
Simmer about hour until vegetables are almost done.

Add Frozen vegetables and 1 1/2 cup barley. Add minced hot red peppers as desired.

Return meat to pot.
Simmer until vegetables and barley are done (about 1 more hour). Add a little more allspice, salt and pepper and 1 tsp sugar according to your taste
