6 extra large eggs beaten
1/3 cup grated Parmesan cheese plus 1 tbs
1/2 tsp salt
1/2 tsp ground pepper
2 medium onions thinly sliced
1 tbs olive oil
1 tbs butter
2 tbs chopped fresh Italian parsley

Directions:
Directions:
In a large bowl, mix together eggs, cheese, salt and pepper.
In a 10 inch fry pan, fry the onions gently in the oil and butter for 15 minutes until golden brown.
Add the egg mixture to the pan of onions and stir gently.
Cook for 4 to 5 minutes until the bottom of the mixture has lightly browned.
Place a dinner plate on top of the pan. Hold the plate with your left hand and the handle of the pan in your right hand. Holding the dish against the pan, flip the pan so that the frittata drops onto the dish. Slide the frittata back into the pan with uncooked side down.
Cook for 3 more minutes until the bottom is golden brown.
Slide frittata onto a dish. Sprinkle with parsley and cut into serving size pieces.
Serve with fresh sliced Italian bread.
Can be served hot or at room temperature.

My mother served this as a sandwich for meatless Friday lunches or Sunday night light dinner. Today I add a few more sauteed vegetable ingredients such as mushrooms, red bell peppers or zucchini.
