1 1/2 c. Minute Rice,
1-10 oz. can cream of chicken soup,
1 1/4 c. water,
2 c. diced cooked chicken,
1 c. frozen peas,
1/2 tsp. salt,
1/2 c. grated cheddar cheese,
potato chips(optional)

Directions:
Directions:
Measure rice into a 1 1/2 qt casserole. Blend soup and water in saucepan. Stir in chicken, peas and salt. Bring to a quick boil, stirring occasionally. Stir into rice. Sprinkle with cheese. Cover and bake at 400ºF for 20 mins. Stir. Garnish with potatoes, if desired.

I don't always boil the soup mixture ahead of time.I mix it all together then cook it for 30 mins. or so on lower setting. This a great recipe to use what you have in the fridge (ham,turkey or chicken). Also have fun trying different chips for the top.
