3 cups grated potatoes
3 tbsp. flour
1/3 cup grated onion
2 eggs, well beaten
1/2 tsp. salt
dash of pepper
vegetable oil for frying

Directions:
Directions:
Grate potatoes and onion with the teardrop side of the grater. (Be careful!)
Beat eggs until light and foamy.
Mix all ingredients in a large bowl.
Heat oil in large frying pan or electric skillet at 350 degrees.
Drop spoonfuls of pancake batter into pan and fry on each side until golden brown.
Remove from pan and drain on paper towels.
Serve hot with plenty of butter, sour cream or applesauce.

My mother made these pancakes on Friday nights when we could not eat a meat meal. We would watch her and eat them right from the pan with tons of butter, before we ate them for supper.
