1 can (10.75 oz.) cream of chicken or mushroom soup
1/2 c. sour cream
1/2 tsp. dried dill weed
2 packages (16 oz.) frozen broccoli, cauliflower, and carrots, thawed
2/3 c. crushed wheat crackers (about 15 crackers)
1/3 c. finely chopped walnuts
1/4 c. finely shredded Parmesan cheese
2 tbsp. butter, melted

Preheat oven to 300ºF. In a large mixing bowl, stir together soup, sour cream,and dill weed; stir in thawed vegetables. Transfer vegetable mixture to a 2-quart rectanglar baking dish. Cover with foil.
Bake, covered, for 50 minutes. In a small bowl, stir together crushed crackers, walnuts, parmesan cheese, and melted butter. Uncover baking dish and sprinkle crumb mixture over top. Increase oven temp. to 375ºF. Bake, uncovered, about 15 additional minutes or until topping is browned.
