3 - 4 lb frying chicken, washed and cut up
1/2 cup light or dark soy sauce
5 cloves of garlic, crushed and skins removed
12 whole peppercorn
1-2 bay leaves
1/2 cup vinegar
1/4 cup brown sugar

4 large russet potatoes or equivalent red or yellow potatoes, diced

- put chicken, soy sauce, garlic, peppercorn, bay leaves and vinegar into a large pot; add just enough water to cover the chicken, bring to the boil and then reduce heat to simmer until chicken is tender (approx. 1 hour)

- in a separate container, heat and boil potatoes until cooked

- prepare a separate saute pan and heat w/ oil; add chicken to saute pan and brown both sides

- in the original pot w/ remaining sauce, turn heat to high to reduce the sauce until thickened; add brown sugar and stir until dissolved. "finish and adjust" the sauce to taste by adding a bit more vinegar, soy sauce, or brown sugar accordingly.

- combine chicken, sauce and potatoes into a serving dish.
