12 medium dark-orange sweet potatoes, 8 - 10 slices crispy cooked and chopped bacon
1/4 cup Panko crispy bread crumbs
1 Tbsp melted butter

1/2 cup sour cream
1/4 cup softened butter
2 Tbsp chopped green onions
1/2 tsp salt 1/4 tsp pepper

Preheat oven to 350º F. Line a 15x10x1 baking dish with foil. Grease 9x13 pan. Pierce potatoes several times with a fork; place in pan. Bake 1 hour 15 minutes or until tender. Cool 10 minutes. When potatoes are cool enough to handle, cut out dark spots. In a small bowl, mix bread crumbs and 1 Tbsp butter. In large bowl, mash potatoes. Stir in bacon, sour cream, butter, onions, salt, and pepper. Spread mixture in foil-lined baking dish. Sprinkle crumb mix on top. Bake 20-30 minutes.
