1 Tbsp Vegetable oil
1 Tbsp minced Ginger root
1/4 tsp Cayenne pepper
4 boneless, skinless Chicken breasts
1 Shallot minced
1/2 tsp Curry powder
1/4 tsp ground Cumin
5 c. Chicken broth
1/2 tsp ground Tumeric
1/2 c. chopped Mango

Directions:
Directions:
Saute shallots over medium heat, add chicken broth, ginger, curry powder, tumric, cayenne & cumin. Simmer covered until chicken is cooked through. Add mango and remove from heat to serve immediately or leave on heat until mango is heated through.
