2 lbs. winter squash, like butternut, acorn
1/2 cup rice boiled for 10 min and drained well
1 cup grated Gruyere cheese
4 tablespoon flour
3 cloves of garlic, finely chopped
5 tablespoon fresh thyme, finely chopped
1/2 teaspoon nutmeg
Salt and pepper
4 oz. fresh bread crumbs
Olive oil

Directions:
Directions:
Preheat oven to 325F. Toss all the ingredients except the bread crumbs and oil until the squash is well coated. Put in a well oiled gratin or casserole dish and cover with bread crumbs. Drizzle with oil and bake at 325 degrees until deep caramel brown.
