1 lb. ground beef or 1 large can of chicken
1 large onion, chopped
1 large green bell pepper, chopped
1 1/2 c. instant rice
2 cans (14 1/2 oz. each) mexican tomatoes, undrained
2/3 c. water
2 c. shredded Mexican-style seasoned cheese, divided
1 tube of refrigerated pizza crust dough
1/3 c. salsa (optional)

1. Preheat oven to 425ºF. Grease a 9x13 baking pan and set aside.
2. Brown beef, onion, and bell pepper. Drain grease. Or use the Busy Mom's Method: Instead of Step 2, mix together 1 large can chicken and 1/3 cup salsa.
3. Add rice, tomatoes, and water. Bring to boil. Pour mixture into baking pan. Sprinkle with cheese and stir until blended.
4. Unroll pizza crust dough and place in one even layer over mixture in baking pan. Cut 6-8 slices in dough with a sharp knife. Bake 10 minutes or until crust is lightly browned. Sprinkle top of crust with remaining 3/4 cup cheese and continue baking 4 min or until cheese is melted and crust is golden brown.
5. Let stand 5 minutes before cutting.
