Ingredients:  
4 chickens quartered or equivalent separate pieces of your liking
1/4 c dried oregano
1/2 c red wine vinegar
1/2 c olive oil
1 c pitted prunes (I use the mini ones or cut up the large ones)
1/2 c capers with a bit of juice
6 bay leaves
Cilantro or parsley
1 c brown sugar
1 c white wine (you could use chicken or vegetable broth, white grape juice)

Directions:
Directions:
Combine all but last three ingredients and cover and marinate overnight. Arrange chicken in a single layer in baking pan(s). Spoon marinade evenly
over chicken. Sprinkle with brown sugar and liquid.
Bake: 350 about an hour---chicken will be real tender
Serve: Transfer chicken, prunes, capers, olives from pan to serving dish (I
will often leave it all in the baking dish, dependent on the dish
appearance.) Remove bay leaves. Moisten with spoonfuls of pan juices.
Sprinkle with cilantro or parsley, serve with rice or couscous. Pass remaining juices in a sauceboat.
