4 (6 oz) skinless pork cutlets 1/2" thick
1/4 tsp salt
1/4 tsp pepper
5 oz Shiite mushrooms, sliced
1/2 cup Marcella wine (dry sherry is a good substitute)
2/3 cups green onions, finely chopped
2 T unsalted butter

Directions:
Directions:
Heat large nonstick skillet over medium high heat. Coat pan with cooking spray, salt and pepper cutlets and add to skillet. Cook until done; 5 to 6 minutes. Remove cutlets from skillet and keep warm.
Reheat skillet to medium high heat, re-spray skillet, spray mushrooms and saute until tender stirring frequently.
Add wine and onions. Cook 30 seconds over high heat, reduce heat and add butter stirring until butter melts.
Add cutlets to skillet stirring gently.
Serve cutlets topped with the mushroom sauce.
