2- avocados (diced small before serving)
8-12 roma tomatoes (diced small)
1/2 purple onion (chopped small)
1/2 green pepper (diced small)
1 can shoe peg corn
1 can black-eyed peas
cilantro to taste (sliced small)
1/3 c. vinegar
1 pkg. Good Seasons Italian salad dressing mix
salt to taste (the Good Seasons mix has salt in it)

Directions:

Mix above ingredients together and serve. Can be made up the day before and then add the avocados just before serving.

This is a wonderful, flavorful Salsa that evolved from another recipe, because Roger and I love Salsa on everything, and we added all of the things we like. We put it on our eggs, burritos, and salads or just with corn chips. Summer time brings lots of tomatoes and fresh vegetables, so we can’t get enough! We are learning how to do square foot gardening. We have four 9 x 9 boxes on the side of the house. Neighbors and family bring their extra garden vegetables to us because they know we will use them all! Salsa is high in antioxidants and is very healthy and nutritious. Both Roger and I grew up in small farming communities with family gardens. Our favorite foods are fruits and vegetables. We both have happy memories of working in the garden pulling weeds and eating the fresh peas from the pods. Roger grew up in China Grove, North Carolina and at age 15 he worked on a tomato farm picking tomatoes. He did not have transportation so he ran 12 miles a day to get to and from work. He grew up eating plain tomato sandwiches and loved them! I grew up in Idaho Falls, Idaho in a small rural area called Lincoln. In the fall school would get out for two weeks so we could pick potatoes. My grandfather, Sterling Nelson had an 80 acre potato farm and I loved picking potatoes in the crisp fall air. While Roger was picking tomatoes, I was picking potatoes. Hey, that rhymes…no wonder we were so attracted to each other. We were two peas in a pod!
